Default Head Gaskets

I’m replacing the head gaskets on my 1937 Ford as one side was leaking and the other had a stripped spark plug hole. Both heads are in a machine shop now, having the surfaces ground and the repair done. The engine was overhauled in 1955 and they used steel faced gaskets.

I see that copper gaskets cost more than the steel ones. Which would you suggest using?

All suggestions/advice will be appreciated.

Thanks, Robert
