A burl is a natural canker on a tree trunk with many random grains, a very subjective thing. What you were asking for looks like burl walnut but maybe not what you had in mind. The fellow that did the job believes you got what was asked for, and maybe thinks you are a pest. Did you give him a photo of exactly what you were after? Did he give you any photos of what he would do? Sorry it didn't work out, but you will have a hard time in small claims court I believe.
