I was taught that the oil level can be a long way down and there's still enough in there to get thrown around by the ring gear to lube everything.
How low can you safely go? I don't know, but lost two rear ends because they were bone dry when I bought the vehicles. The first thing I do when I buy a vehicle is change the fluids and check the brakes, but by the time I drove these two home, the damage was done.

Be safe and keep clean fluid up to the fill hole.
