(If) you were going to still use that oil temp gauge just for decor and not for actual accurate, measurements, Why not just foil tape or heat wrap the sensor end somewhere discrete where it will still get hot and function, just not a temperature that you are relying on. Behind the breather, tucked up next to the block. It would get hot enough sitting on the head to register temps and only you would know that it's not a real reading.
