My Wife speaks fluent French. Guy's a butcher, and basically says "specialty meats of choice"

Nope......it is actually Canadian (from Quebec, Canada). The LaFleur butcher company is still in business and celebrated their 100th anniversary in 2012. Here's the link to the LaFleur web page: https://lafleur.com/en/

That Model A photo originally appeared on their web page under the history tab, in 1930.

They were shipped without the spare tire. That must be a picture of his fairly new truck and he hasn't taken the time to see his dealer or tire shop for the rubber yet.

The name on the side of the truck is a Quebec based company, Lafleur, which has never had any branches anywhere else than in Quebec, Canada (in the french speaking part of Canada). The "Alp. LeFleur" on the side of the truck is the short version of "Alphonse Lafleur", the name of the company's founder.

For some reason there was a tire shortage in the US around 1975? cars were shipped with a rim in the trunk for later installation.
