Default Rear brake track rivet

I'm going to replace both heavy worn rear tracks on my 29 Tudor. It seems simple enough to grind off the old rivets but have two questions.

I plan on buying the new track from snyders unless there are better ones out there.

I know I have to red hot the new rivets but What technique to get the mushroom head? Is there a special tool or just smack it to flatten it out?
