So that's it! Now I see that there is a wave spring between the two friction plates that appears to flatten out under pressure so, with the pressure plate bolted down, the total thickness should be close to the stock Ford dimension. The original design clutch plate - no springs, just riveted friction plates - was kind of primitive compared to a more modern assembly.
