Coolant level
How do i monitor the coolant level and when it's low what is too low?

As long as the coolant is over the top of the tubes in the radiator you are good to go. No need to add any coolant unless they are exposed. Too much coolant and it will push the excess out. Resist the urge to put any in unless the tubes are exposed.

You should not have to add coolant very often. If it keeps going away, you have a problem.
