would appreciate suggestions on how best to remove the original cone-shaped (press in) alemite fittings from shackles without destroying them.

Heat the shackle in a vice. Once cherry red, twist while pulling on the grease fitting with a pliers or vice grip. I did nine sets this way recently.

Careful as you will be burning any grease on the shackles.
