Default 36 temp gauge replacement

I'm swapping out my 41 motor to a fresh built french block motor. The original temp gauge fitting is firmly stuck in the old head and attempts at removal have resulted in rounding off the flats on the fitting. Even vise grips won't budge the thing. I'm assuming I'll need to cut the wire that runs to the temp gauge. Is the probe bulb replaceable by a gauge restorer? Searches for a replacement gauge assembly haven't been very fruitful.
Any assistance will be greatly appreciated.
