Default Model A questions

Do the Model As use red water hoses or these black ones with a red stripe? Is it possible to remove the column drop on my 1931 Model A Deluxe Phaeton, because I'm tall and would need more space for the knees. I have some fear to do this, because the steering box is mounted to the frame and allowed no other angel of the column? Is that correct?
But there are cars without this drop and some have it? What can I do to damage nothing? My 1930 Cabriolet don't have this drop and I have perfect leg room and the Deluxe Phaeton is a little bid hard to drive for me. Thanks for your help, Alex
