Default Carb question

I'm building a 59A with a very mild increase in performance. I plan to start it with the stock single carb manifold to keep it simple. I have in my possession 6 carbs:
Ford script, Circle 1,model EBV
Ford script, 94, 15/16, model 59
Ford script, 94, model 91/99
2 Stromberg carbs, EE-1 on bottom
Ford, 1 1/16

Which would be correct for a 41 Merc?
Which would give the best performance?
Is there a source of information for the history of when each type of carb was used?
I hope I'm not opening up a can of worms! I did do a search.
