Perhaps the reason why you could not find a video or possibly instructions how to pack the rear wheel/hub bearings is that they are not packed. The Ford issued lub chart says they are to be greased every 500 miles with a pressure gun, the fitting is on the underside of the end of the axel housing.

I tend to disagree. I packed it, and as pointed out it is written in Les Andrews to pack them. Also the grease fitting is usually clogged or the seal could be bad and end up pushing the grease towards the axle tube instead of the bearing cavity.
