Default Temperature Gauge

On my 1939 pickup truck, I was cleaning up the temperature gauge and it has no red liquid in it. The sending unit looks good but has not been tested. Questions: I want to use the original dash gauges and wondered if I can have the red liquid replaced and then have the sending unit tested and replaced if necessary? I see pictures of two brass temperature sending units from the engine heads and wondered about that setup. Am I right to assume those are electrical units that wire to each other and then to an add on unit under the dash?
