Default Head gaskets and aftermarket heads

I seen numerous pics of a flathead V-8 head gasket laid up against an aftermarket head and instead of the head gasket following the around the perimeter of chamber shape, it pulls back especially at the transition between the piston and valve area. In fact even the size of the water jacket openings in the gasket don't mate up to the openings in size and shape to the head. I was wondering why? The only thing i can figure is to slow up the water transfer from block to the head in order to guarantee water stays full around the piston walls.
