I am mounting a new steering wheel in my 31 coupe and wonder which of the two keyways to mount it on. With the steering gear in the straight ahead position, what should the steering wheel look like?

The choice is your's. Do what you like best, as that's why they offered a choice.

Choice has to do with driver height, clear field of vision, etc. Different driver conditions/situations require different positioning of wheel spokes. In your case you have a choice not easily given to drivers who already have the steering wheel in place. Sit the car's main driver behind the wheel and 'get a feel' of which setting provides the most visual clarity.

I read a long time ago that Henry positioned the steering wheel for male driver or female driver. It stated that a woman would be able to see the speedometer better if the wheel spokes were positioned not vertically and horizontally but at a 45 degree.

Thanks for the answers! This must one of the few cases where Henry allowed an option for the fitting of the part! One other question: given the difficulty in removing a steering wheel from the shaft, would it be a good idea to apply some anti-seize compound before bolting it down?

Then there's this example where Darwin is waiting to eliminate another inferior specimen:
