Default carburation

So my 1941 ford sedan has a newer 1951 mercury flathead in it. Has a chevy conversion dist. in it and am trying to run a holley 390 cfm. carb.
I have read all the information about this carb set up and they either know how to adjust carb better than me or mine is just messed up. I am thinking the latter.
So my question is that I want to install adapter and go with a 2 barrel as I think its just dumping too much fuel. Really gags it.
Looking at older 289 carb and wondering if it will run backwards alright. I think this old ford must be one of the few with carb linkage on passenger side.
