Here in California we have Stage 2 vapor recovery systems on the nozzles in most urban areas. My filling the tank is a two-handed affair, and I keep a pair of gloves in the trunk to help.

This ought to be a clue that the problem is likely not carburetor. This sounds to me like a vacuum leak, not a fuel starvation (that would tend to be apparent under load, not at idle). Are you sure...

Be careful re: the guides. Standard Model A valves have a flair on the bottom for the valve keeper. You can’t pull the valve straight up after removing the keeper and spring like you can on a modern...

If someone knowledgeable thinks the knock might be valves, check to see if you have adjustable lifters. If not, then you might consider going the extra 10 yards and pulling the engine to install...

Last year I picked up 19/32” and 21/32” sockets off Amazon for very reasonable cost. Got into the engine and someone had already replaced those nuts with 5/8”. Go figure.

I have the hinge mirrors on both sides of both of my sedans and love them (I had to mod one to fit the right side of the 31 slant). Not sure off the top of my head how the cabriolet door would differ...

You never really know what you have until you tear it down. I got real lucky on my ‘30, what minimal dicey wood I have can be corrected with epoxy.
