I have a " stock rebuilt, with trips".
It has an electric fan. So, I run a
160 degree thermostat..

For what it's worth, I have a 195 Fahrenheit thermostat and I am very happy with it, come summer or winter driving. It's just my opinion but I believe that Y blocks run the best on the hot side of life. It especially helps the keep the sludge out of the crankcase.

160 and 180 degree farenheit thermostats are commonly available. I have always used the 160 degree, because ignition condensers tend to fail if it gets too hot. Have not had any trouble in winter yet, but several times during summer in ambient temperatures above 90 degrees.
Make sure you install the thermostat in the proper direction. It is stamped on one side "this side toward engine".

If you'd like a little more water flow there are a couple thermostats with a larger opening.
Mr. Gasket or NAPA # 6 sounds familiar, among other brands.
Here's a link to an example but (depending on your location) you should be able to find one like it at a local auto parts store for half the price of this one.

There is a possible installation complication with '57 4bbl intake manifolds that can easily be solved...
