There is at least five different exhaust gasket material offered. I want one that will hold up. What is the best manifold gasket to buy?

I like the copper clad original type. I also use the gland rings at the exhaust ports.

I feel this is very important but I am sure others may have a different opinion.

I'm about to switch back to the copper gaskets to try to help with a vacuum leak.

The late 31 copper gaskets. They can be installed WITHOUT removing the manifolds. FWIW

When you take the manifolds off check for flatness. If the they are not all in a line or have heavy pitting get them surfaced as a unit. Also check the block in the area around the ports. Any deep pits around the (esp) the intake ports can be cleaned, filled and leveled with something like slow cure JB Weld. If you have the manifolds surfaced, dry fit to see if the gland rings need to be reduced in height to get gasket crush.
Copper is what we use, none of those fiber type. The fiber unclad burn out too fast but will work if you are in a pinch.

You can massage the gasket surface of manifolds and even heads by gluing a sheet of fine sandpaper onto a piece of glass on a flat surface. I use an old glass washing machine lid.
There is a neat video of a guy actually doing heads using this method...
Go to you tube and type in cylinder head resurfacing... Chap
