Crown goes to the outside - toward the nut

Concave side always faces in, so the nut puts pressure to the high center of the washer.

If the thickness on the two manifolds are different the washer tilts. With the high side towards the nut it "compensate" for this tilt. In the picture below all the elements are the same size, the curved "washer", the black boxes are the manifolds, and of course the nuts.
