Very interesting post.. I have a very tight refurb engine..new rings ect.. I installed a thermostat Stat 160* and was getting temps around 190+ and when stopped it would go up to 200...I also have a brand new Berg radiator..
Removed the thermostat and Now i run around 14-150 all the time..When it is stopped it goes up to about 165. On a cold day it runs consistent at 140. I also use a hand held temp gauge to verify the APCO gauge....
