I've heard anywhere from 3 to 5 grand. Not saying that's the rule or applies to every shop, rather, that's just what I've heard. I'm actually in the process of helping a buddy of mine rebuild a flathead engine. We're doing all the work on it except for the block machining and balancing and maybe some pump/carb rebuilds.
