Once the car is moving the fan really doesn’t do much to help the cooling.

If you have a correctly restored cooling system, good radiator, two blade fan, water pump, engine side pans, and properly timed. My view is you should not have any overheating problems.

I don’t run with a thermostat, and use only distilled water with rust inhibitor.

I have never had a Model A over heat. Engine runs at around 165 degrees. Heat is one of the biggest reasons for engine failure.
