I believe they were plated, not stainless. It's been many moons since we restored a 30 Sporty. It was missing the landau irons but we found a set at a swap meet. I'm sure they were original as they were steel tube with crimped center. I remember we had to be real careful getting the centers off without destroying them so they could be re-plated.
