The 1947 Ford Operators Manual for Heavy Duty Trucks states the following minimum tire sizes:

COE w/single speed rear axle:
7.00x20 front
7.50x20 rear

COE w/2-speed read axle:
7.50x20 front
8.25x20 rear

This is different from the regular cab trucks (also listed in same manual, I can provide if anyone needs the data). The reason for this is that the COE weight distribution was different as more weight is applied over the front wheels on a COE in both loaded and unloaded configurations.

I can't say that minimum tire size = original tire size as certain applications may have required different sizes. I figure the Ford manual data is the minimum safe size for these trucks to operate up to their rated gross weight.
