Yes, "S" is the color code letter for Special or Special Order, any other Ford color for that year. Might also be limited to the colors available at the assembly facility where it was built??? The actual color would likely have been noted on the Build Sheet / Invoice.
There was also a color code P, for primer, for painting after delivery.

The original build sheet / invoice records for '58 light trucks likely don't exist so picking an out-of-the-way spot to sand it down to the original paint may be an option, if you really want to know.
