They serve as on-off valves and do not meter amount of gas...the metering is the restriction in the passages in the casting.
8 is a recent sort of marking denoting vacuum level that moves the valve.
S--that MIGHT be one of the marks used by Ford fro the few different versions for 8, 12, or 60, but I do not have the letter symbols here.
Be sure valve has the ring for gasket in the right place to match carb, as the ones for some 4-barrel models differ from what you need
