I have found the modern oval head stainless screws to be too 'thick'. The original screws came to a sharp point at the edge. The modern ones are too thick and will stick out higher plus they have a rounded edge.

I chucked them up in my battery operated drill and used a file to dress the head to shape. Then I used successive grits of sand paper to remove all the scratches so I could buff to a polish.

I had to do this with the screws for my 68C door dovetails from A&L. They were supplied with modern stainless screws and they stuck out a bit far to the point of interfering during door closing. Ya I know they shouldn't, but I resurrected some pretty bad body stuff and learned on the way. It did not take long to make the screws look right and fit good. Yes, there is a color difference between the nickel and the stainless.
