This makes me think…if it only leaks when hot, would a block pressure test before I built it had even mattered?

Yes, a pressure test would have more than likely caught it. A crack is a crack and it doesn't take much pressure to push air through it. While cold, it may not be blowing through, but the tell tale soapy bubbles means it's coming through the other side.
