Thanks for all the great advice guys! It will likely take me a while to find the right car but I'll keep looking. I like the idea of the overdrive, I'm going to look into the Laycock one.

I really enjoy fixing up old cars, I just don't always have the time. But a project car doesn't put me off as long as it's the right car. :)
