I picked up two small led bulbs from Radio Shack, one green for starboard and one red for port. Right and left for you landlubbers.

I ran a couple of small gauge wires that are tied into the turn...

Not sure you need to go down the leak down / compression testing route quite yet.

If it was running better than it is now before the head gasket replacement there was something that was disturbed...

I'm not thinking the the weight of the oil is the most likely cause of your problem.
Perhaps you are running the oil level too high.
Most it seems and I am one of them run the oil at the mid point...

Did you pull the manifolds off? Check the gaskets and torque on them. Also check that the carburetor is snugged up to the intake manifold.

Had the exact same situation on my truck that you are describing. The two bolts securing the front motor mount were slightly loose. Tightened them and the noise went away.

Are you actually overheating? Place the probe of a dial meat thermometer into the coolant through the neck of the radiator and see for sure what the temperature actually is. You might just have too...

As long as the coolant is over the top of the tubes in the radiator you are good to go. No need to add any coolant unless they are exposed. Too much coolant and it will push the excess out. Resist...

On the back fire check to make sure that you didn't accidentally put the radiator cap on the gas tank. That will create a vacuum and cause loss of power and backfires. Run it without the gas cap on...

Are the pin holes accessible? Like on your tank? Black cotton t-shirt type material saturated with black silicone caulk and placed over the hole(s) will be a long lasting temporary fix.

Stingray mentioned the water pump. Use very little grease on it. Especially the rear bushing. A half pump will be plenty for it. The front doesn't take much more. Too much in the rear will go right...

Thinking a bit out of the box here if you don't have access to a compression tester.

Bring it to top dead center on the compression stroke.
Use some Play Doe, a moist rag or such to make a seal...

After having the engine rebuilt did you check the torque after installing and running the engine.
