How to do this as I like to try it myself

Go to Bob Johnsons Model A House site, click on technical articles, click on speedometer articles to see how to do it.

Click on Technical Articles at the top left of that page.

Then click on Speedometer Articles.

Then on Service Hints (second from the top)

That will take you to an article by Les Andrews on disassembling and reassembling the speedometer. You can reassemble it with the odometer wheels placed where you want them.
