I agree with Bill on this one. I'm no expert but gears grinding means that something is still turning when it shouldn't be, which would indicate that the clutch is not releasing fully. Ckecking and readjusting the clutch freeplay to even less than the recommended 1" as Bill suggests will cost you nothing and would be the first thing I would try.
Different oils may have some effect on changing of gears but I wouldn't think that it would result in making it impossible as you describe.
